Fennel Salad
Ingredients:
2 big handful of baby spinach leaves
Fresh fennel bulb
1 grapefruit segmented
a handful of roasted pine nuts
a handful of capers
1 Tb truffle oil
salt, black pepper to taste
In a big bowl mix together truffle oil, salt, pepper and grapefruit. Add the rest of the ingredients and toss well. Transfer to a serving plate.
